RECIPE: SPICY LENTIL SOUP

This has to be one of my favorite plates to make. It's not only delicious and super healthy (lentils have the third-highest level of protein, by weight, of any legume or nut, after soybeans and hemp.) it's also simple to make and inexpensive. There is different variations to this recipe but this is by far my personal favorite.

Ingredients:
Serves 4-6

1/2 lb. Lentils
1-2 Jalapeno Peppers
1/4 Onion
1 TBSP. Olive Oil (optional)
1 Tomato
4 cups of water
Salt and Pepper to Taste
1/2 garlic moon

Directions:

1. Rinse the lentils well then place in a bowl with water to soak.
2. Meanwhile, dice or slice jalapenos, onion and tomato.
3. In a small pot under medium heat pour in 1 tbsp. of olive oil (or your choice or none at all) followed by adding the chopped tomato, onion and jalapeno.
4. Use a colander to rinse the lentils one last time and add the lentils to the pot.
5. Stir well and add garlic, water, salt and pepper. 
6. Lower heat and cook 'til lentils are soft (about 20 minutes)

RECIPE: BUTTERMILK PIE

One of my favorite part about the holiday season other than spending time with family and eating yummy food has to be dessert Buttermilk Pie to be exact! I wanted to share a very simple and easy recipe. Try it out for the upcoming dinner {making mini Buttermilk Pies make a great 'homemade' gift for teachers or neighbors}

RECIPE: CREAMY TOMATILLO AND AVOCADO SALSA


I haven't done a recipe in quite a while so I wanted to share with you this tomatillo and avocado salsa I made a few nights ago to use as dressing to a chicken salad I made for dinner { I will share my chicken recipe later } but for now try this quick and easy salsa recipe and use it in almost anything.

One of my favorite magazines has to be Real Simple. One of the first recipes I decided to try was the Steak With Potato and Blue Cheese Salad I made it for Carlos' and I anniversary dinner. It is one of my absolute favorite recipes and I wanted to share it with you.

RECIPE: CEVICHE DE CAMARON | SHRIMP CEVICHE

I was born in the Pacific coast in Mexico, only fifteen minutes from the beach! I moved to Texas when I was only eight years old and specially moving to North East Texas I do not only miss the beach but I miss the sea food. I don't care what they say! shrimp or fish from a chain supermarket has nothing on fresh out the water sea food. This will be my first recipe blog post, but lets all remember that we all cook dishes differently! Your moms enchiladas differ from my moms enchiladas. This is just "How I" make shrimp ceviche. Carlos was born and lived in Mexico until he was seventeen years old but he was in the middle of the Mexico map, not a beach in sight not a fish or shrimp near. When I first made my shrimp ceviche he was hooked and that's how we came to have our famous "Shrimp Ceviche and Beer Nights"
So... Let's get cooking!

Ingredients:
4 lbs of raw medium-small tiger shrimp, peeled and cut into 1/2 in. chunks
2  tomatoes, diced
1/2 red onion, finely chopped
2 cucumbers, peeled or not, seed removed, and diced
3 jalapeno peppers, 2 of the 3 ribs and seeds removed and diced. Dice the third with ribs and seeds.
1/2 bunch cilantro, finely chopped                                                      the juice of 15-20 limes, for the shrimp
Salt and pepper to taste

Fried tortilla chips or tostadas
Salsa Valentina (Optional)
