RECIPE: CREAMY TOMATILLO AND AVOCADO SALSA


I haven't done a recipe in quite a while so I wanted to share with you this tomatillo and avocado salsa I made a few nights ago to use as dressing to a chicken salad I made for dinner { I will share my chicken recipe later } but for now try this quick and easy salsa recipe and use it in almost anything.

Ingredients: makes 1 cup

1 large tomatillo, quartered
1 large jalapeno or serrano pepper, sliced and seeded if needed
1 small clove of garlic, chopped
1 tablespoon olive oil
1/2 bunch cilantro
1/4 medium white onion
1 medium/large avocado
Salt and pepper to taste

Directions: 

You can do this two ways. 
  • Saute the tomatillo, jalapeno, and garlic in the olive oil over medium-high heat until soft, about 6-8 minutes. Meanwhile, add the  cilantro, green onions, and avocados to a blender or food processor. Allow the tomatillo sauce to cool and add to the cilantro, green onion and avocado mixture to blend together. Add salt and pepper to taste.
Or you can do it the easier and faster way { the way I did it }
  • Add the tomatillo, jalapeno,onion, garlic and olive oil to a blender or food processor. When well blended add the salt, pepper, avocado and cilantro.
You can add more tomatillos, avocados and jalapenos for bigger servings.
Serve this as a dip, or with taquitos as a salad dressing or to top grilled chicken or beef!
